"Life is short, eat dessert first" - John Poole
John Poole opened Poole's Pie Shop in 1945. The pie shop flourished but soon the patrons were wanting more. So in the early 1950's the pie shop transformed into Poole's Luncheonette. This was thought to be the first hot spot in the city. Most recently Poole's has returned to its diner roots under the ownership of chef Ashley Christensen. The restaurant now serves fresh, locally grown food in a retro, old school diner atmosphere.
We visited Poole's Diner last weekend with my cousin and her husband. What a delicious meal! If you ever make it to this restaurant and they have the mac and cheese on the menu, you MUST order it! It is unbelievable!
